Ingredients:
1 cup all-purpose flour 2 tablespoons granulated sugar 2 teaspoons baking powder 1/8 teaspoon salt 1 cup milk 1 large egg 2 tablespoons unsalted butter, melted 1 teaspoon vanilla extract (optional) Butter or cooking spray for the pan
Instructions:
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if the batter is slightly lumpy. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or cooking spray. Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface of the pancake and the edges are set, about 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes, until the other side is golden brown. Remove the pancake from the pan and repeat with the remaining batter. Serve the pancakes hot with your choice of toppings such as maple syrup, fruit, or whipped cream. Enjoy!
