I have wondered if using a submarine swap can offer some similar good enough privacy benefits to mixing/CoinJoins and if I could use that instead because it is simpler, easy for me to understand and I am comfortable doing them.

I wonder if there's something to be done with submarine swaps to provide better receiver privacy. If you can privately interact with a swap provider, which should be possible, you could receive lightning payments on-chain - albeit with higher fees. If pLN develops the swap service, this could also be a way for them to make money.
