I’m more interested in what’s happening to the Bitcoin in various mints. Are they swapping? Coin joining? Consolidating different peoples bitcoin?

The mints only move Bitcoin when users want to swap out back into Bitcoin. They don't do any conjoining or consolidations.

Then how does it become more private over time? Is it that different users are taking different UTXO’s first?
