The mesquite tree grows in arid and semi-arid areas and comprises 44 species, of which 9 are found in Mexico, with the juliflora type being the most abundant.
Being exposed to insect attacks, mechanical wounds and conditions of extreme physiological stress, such as heat and lack of water, this tree induces the secretion of an exudate or rubber as a defense mechanism to prevent the drying of the tissue and prevent the entry of pathogens.
This rubber varies in color depending on the species (from light yellow to amber red or dark coffee), has the shape of amorphous tears, ribbons or nodules and a sticky semi-solid appearance at the beginning of its exudation, losing moisture over time.
The secretion of this rubber or "gummosis" can last up to 16 weeks (not all trees exude it at the same time) and begins between May and July and ends with the arrival of the rainy season. Chucata is gum-like, has a pleasant, slightly sweet flavor and a sticky consistency.
As an additional fact, "chucata" is considered an emulsifying and stabilizing agent in mayonnaise, sauces and dressings and an encapsulant for citrus flavors.
