Okay to go from a iPhone to iPad set up to getting off Apple to having the same work flows that hardware and software so you recommend

Please be more specific, ask for which applications and I will try to give you what equivalent there is on Android.
Typically the biggest hurdle is to export all passwords. You are probably using the default keychain on IOS. To export you either need a Mac or to do it manually:

I did it manually for my wife because she had the same password for all websites so it was easy.
The second hurdle typically is pictures and other files, you will have to save it somewhere. In my case I used Icloud and exported with a computer. The default setting is to save it to ICloud so maybe you will just have to copy it.

Actually those two things are not an issue for me. I self host that stuff already.
I was thinking more about hardware. Go with a pixel and a google tablet and change the OS?
