During my maiden trip to Japan, I was shocked by how McDonald’s didn’t provide chilli sauce for its meals. Generally speaking, Singaporeans love their chilli sauce. Don’t believe me. Look at my array of food photos.

If you zero in on my photos, you will notice that my favourite brand is Ultra Death Sauce. My ritual in Japan involves me buying a bottle of this much-anticipated chilli sauce. You can infer that I savour every single drop of it, given how much I use it to spice up my meals.

The idea for this post came yesterday when my wife brought home this marvellous bottle of chilli sauce from Yugoslavia.

In New Mexico (southwestern US state) the McDonalds all have a large pot of green chile sauce. It's roasted green peppers diced up with onion and sauted, then some cumin and a bit of flour to thicken it with chicken broth as a base. I lived there years ago but still fill my freezer with roasted green chile peppers every fall so I can make the stuff. It goes on about half the food in New Mexico (the other half being topped with the smokier cousin - red chile!)

I don't usually eat everything spicy 🌶️ but I do like it! When I visited Peru I was very surprised that they use a lot of spicy food there, even in the snacks at the store, you can find all kinds of spicy food. I don't consider myself a chili lover enough to use it in every meal, but I do find it essential in some others. I hope to try that "Ultra Death Sauce" one day.
