Which is nice, but at the same time the moment you link ably to your node, all your lightning balance is 1 alby password away from spending, right?

It's self-hosted, so If you use it with Tailscale noone can access the link for you.
You can also use budgets limiting how much can be spent through Alby Account from your node

You set the password for your Hub like you set a password for other wallets. Alby cannot recover it for you.
