can anyone with insight explain what the Payment in Coinjoin feature does/is -- and how it's accessed ("through the RPC"...?)

Wasabi allows you to use the application with an RPC interface for command line users instead of a GUI interface.
'Pay in Coinjoin' is an exclusive feature for RPC users that allows you to send funds to the final destination address directly in a coinjoin transaction instead of performing the coinjoin and payment across 2 separate transactions: https://docs.wasabiwallet.io/using-wasabi/RPC.html#payincoinjoin

The highest boost on the site stays pinned to the homepage for 30 days unless someone boosts higher.
The expectation is that people keep kicking each other out of the top spot. People just haven't realized it yet so it's very uncompetitive.

No, they only paid once for the boost, it's not a daily payment.
Boosts stays on top for a month or if someone boosts more.

Giving this wallet a test run. How do you all think it compares with Sparrow?

Sparrow has a lot of flexibility with support for multisig and many different script types. However, Sparrow will leak all of the addresses in your wallet to third party servers during syncing unless you've already connected your full node first.
Wasabi specializes in privacy and does all network communications through Tor by default. Balance discovery uses compact block filters (BIP157/BIP158) by default to synchronize privately in a lightweight way. This reduces the data requirement compared to a full node by ~99% without leaking your wallet's addresses to anyone else's server.
The main feature of Wasabi is the ability to participate in coinjoin transactions. Coinjoins bundle your inputs with other users into the same transaction to fool tracking attempts made by blockchain analysis. Sparrow removed their coinjoin feature in April (although advanced users can build coinjoin transactions "manually" using Sparrow's tools).

My understanding is that Wasabi's official 'coinjoin' coordinator is no more... Are there other coordinators, new ones, that are trusted with good liquidity? I'm very hesitant to use others unless they are vetted and legitimate.

Coordinators aren't trusted with custody of funds or data, your open source software does the vetting for you. Here's some coinjoin explorer sites, I run a coordinator, you should run one too :)

Yeah, I wish Wasabi supported Lightning directly too. But you should still coinjoin the UTXOs that you use for channels, otherwise your off chain privacy will eventually leak on chain.
