I think single season series format has the most flexibility, assuming you have enough story for a season. One off movies are my close second choice.
The streaming era has done away with writing episodes around commercial breaks and rigid runtimes. So you can have episodes 10-20min longer or shorter than the last and keep a natural flow.
They're also less restrictive than 2-3h movies that demand more upfront time commitment especially if those movies are meant to get butts in theatre seats.
To mimic the 2-3 movie series, a single season can also be split into 2-3 parts. Like Cobra Kai currently (great series btw) has its finale season with 5 episodes per part, each part a few months apart.
I think the flexibility is really fine if the writers can do it. I thought Babylon 5 was a great 5 season series. It was not done in a flexible way though, It was the standard TV style, commercial time and all of the rest. But, the writers really had that one down well.
