A place near me has a bunch of different Colombian pastries. I'm now hooked on pandebono, which is a cheese bread (sort of like Brazilian pão de queijo) made of cassava starch, cheese, and eggs. It's chewy, the right amount of cheesy, and mildly sweet, and sometimes you can get it with guava. It also freezes and reheats well in the microwave, so you can just get them ready to eat in a minute.
What's a food I wouldn't commonly come across (or something regional that you like) that I should try?

pandebono
I suspect I haven't had good pandebono, but I prefer colombian bunuelos (which are made from similar ingredients and deep fried).
It'd depend on where you're from for me to know what you wouldn't commonly come across. My nym k00b is short for koobideh which is one of my favorite foods, a kabob made from ground meat and onion pulp.

I had a buñuelo the other day from that store and took a pic when drafting this then left the post. I liked it less than the pandebono, I think because I expected a pretty cheesy flavor because of the ingredients, and I didn’t get it.

I was surprised by the lack of cheesiness too. They're one of my favorite bread-like things. I love most things made from tapioca flour though, including pao de queijo.
One thing I've been meaning to experiment with is making brownies from colombian bunuelo ingredients. The lack of cheesiness would be an advantage in that case and the cheese would probably enhance the texture.

My friend, try Venezuelan cuisine, it is exquisite and I do not recommend it just because it is from there (maybe a little), from the arepas to the sancocho. I recommend an arepa 🫓 with black beans and cheese 🧀 for breakfast, pabellón for lunch and soup for dinner. You will not regret it.
