I haven't come across any community forums that use the lightning network to facilitate users thanking contributors for great answers. Have I just missed them, or is there a dearth of choices?

Maybe a distraction or an opportunity for SN to create a solution. I mean, there is no excuse for forums for mynode and umbrel to not facilitate users to thank each other with sats.
