I'm wondering if bitcoin wallets could technically access location data and restrict funds if governments required, particularly in custodial wallets. I know that non-custodial wallets are harder to regulate in this way but there is certain tension in the air starting from tomorrow 30th dec specially in the EU.

Absolutely not.
On Android you can see if the app requires Location permission, and remove access to it. There's no wallet i'm aware off that asks for Location, that's a colossus red flag.
You should always go for well known open-source wallets, and download the apk straight from the source (no PlayStore shit).
