Suffice it to say that I love my Japanese wife's cooking. So, when my colleague asked me for one of her recipes, I immediately thought of her unique chikuwa (Japanese fish cake). As you can figure out from the recipe, it doesn't take too much effort. Plus, it includes various ingredients that I love: mayonnaise, cheese, and crabsticks. I think her recipe is an example of how my wife takes into account my favourite foods and adapts the chikuwa to suit my taste buds!

I don’t think you have to be fancy about this. Just get regular cheese from your supermarket. That’s what my wife does.
