Do I have to put the proceeds of the payout back into replacing my destroyed property? Or do I have the freedom to do whatever I want with the money?

I wish I knew more about this, so I could provide some useful answers. In the event of insurance payouts, you do not generally have to anything in particular with the money.
This will be incredibly un-PC, but I remember my mom telling me that suspicious building fires used to be called "Jewish Lightning", because they were assumed to be done for the insurance payout.
