WALK INTO ONE of the seven Ascension Coffee shops in Dallas, and there are tall glass towers that baristas use to make the upscale cafe's signature Japanese iced drip coffee. It takes 12 hours for the water to filter through before a barista hits the coffee with a dose of nitrogen and pours it in a cup.
