Those are the kinds of industries that will be very last to get off fiat. So, it's okay to continue using fiat with them, for a while.
These kinds of movements happen with a domino affect. Start with the small merchants.... mom-and-pop, brick & mortar.... and this will force the suppliers of those shops to consider making the switch.... which will force larger institutions and countries to make the switch eventually.
The problem is, no one is really even pushing the smallest dominos to fall. Bitcoiners have to be willing to boycott some merchants, and go out of their way to support others. We have to start small.... we can't go after the big oil companies first. That will come later.
So, pay for gas with fiat now.... but go out of your way to find local farmers accepting Bitcoin for produce & meats.
With so many Bitcoiners using "bitcoin" debit/credit cards, I'm doubtful this revolution is ever going to even get off the ground. We're playing right into the hands of the central bankers while we larp about taking down fiat. As a community, we are not angry enough about fiat. We're too comfortable sleeping with the enemy. It's that simple.
