I was alone and reading my seed phrases in front of my iPhone. My device was not in recording mode or any sort. What are the chances that my iPhone was actually listening to my words? I've heard theories that devices might be eavesdropping on conversations for the purpose of ad targeting or similar reasons. Does that mean my seed phrases have been exposed?

I think it's a big problem. Many of us have experienced having a conversation about a typical topic like traveling to Thailand, and then you start seeing adds from travel agencies.
If you have significant funds on this seed I would move it. Probably best to read your seed phrase in your head and without any devices around.
