I’m not sure the motivation for this.
I’ve seen people use figures like this to push back on the claims that America is systemically racist. The point being that minority groups are more successful here than anywhere else, including places where they are not minorities.
I wasn't tracking what this graph was about, but now I'm clued in. It's just sayin' Latinos are a major part of the US. Just don't see how they got to these digits, but that's a whole other story!

We know a lot about incomes across demographic groups. The most straightforward way to do this calculation is to just add up all the incomes of self described Latinos.

To get a reasonable estimate, yes.
The value of total production can be estimated from either the income or the spending side.
