I was told Breez wallet has the same level of privacy as running your own node and connecting to it remotely.
But when Breez has to help you facilitate the transaction because you don't have enough inbound/outbound liquidity, can they log identifying information?

Breez doesn't facilitate anything with outbound liquidity (what that even means?).
Re inbound, I already explained the process. The privacy remains the same because hops are familiar with their peers (the LSP is connected by a private channel to the edge).
