What is in your opinion the most exciting Bitcoin technologies that are emerging?
In my case, I was pretty impressive when I first heard of LNURL protocol and two particular use cases: authentication via LN and Point Of Sale offline machines. For those who don't know yet, Point of Sale is (i will try to explain my best) a way for merchants to receive LN payments in a more convenient way: instead of having to generate an invoice order via a LN wallet, they can use for example an offline machine that generates QR code enconding a LNURL, the user scans it and pays it right there, even if the merchant is offline (but the user has to be online)
Cashu and LnBits are great tools. Like the idea of private payments with custodial wallets

What is Cashu all about? Could you give me a short explanation please? I`m newbie to these new technologies
Lightning Splicing. (Still in the works.) You can "splice-in" to add funds to a LN channel on the fly, with no downtime, in 1 transaction. (And it looks like a normal on-chain payment with taproot.) Also, you can "splice-out" and remove funds (bring them on-chain) with 1 transaction.
Whats more, these splice-out transactions can be batched to do a coinjoinlike transaction that is CHEAPER than a normal transaction.
You can learn about it in this talk by Dusty from Adopting Bitcoin Conference in El Salvador:
