I don't believe I am connecting over Tor but I will need to dig through settings to confirm.

Embedded node doesn't have Tor. But maybe you are using Orbot or somekind of VPN like that.
That could affect the UX in general, by not being able to refresh all the services correctly.
Is important also to mention which node you are using: LDK or LND (dbolt or sqlite).
Each node type have different way to connect.
