I thought traffic cameras are actually considered inadmissable evidence. You can actually contest red light tickets from automated cameras if no police officer shows up to the hearing, I've heard.

This was a murder charge. For serious crimes people are typically held without bail until a hearing where evidence needs to be produced.

Still, I imagine automated traffic cameras existed long before Flock and there's already settled case law about this.

I'm not sure of the law in Florida, but my point is it doesn't matter. Using your example, the hearing wouldn't take place immediately. The delay isn't a big deal for a traffic ticket, but it is if you're sitting in jail.

I guess I'm wondering what/if there's a remedy if you get arrested on only evidence that was never admissable in the first place

Why do you say it's not admissable? Camera evidence is admissable, so far as I know. The missing cop you're referring to would provide corroboration. The camera evidence by itself, without corroboration, may not be adnissable, because the evidence can't be challenged meaningfully.
