What is the simplest, low cost interface that will allow me to sell products from my own website, accepting, btc, lightning, and fiat?
(i know that shopify is one, for example)

Option 1
- Install Wordpress + Woocommerce on a good VPS
- Install BTCPay or LNbits on your home node / VPS
- Open a bunch of good LN channels on your node
- Connect your webshop to BTCpay or LNbits with their woocommerce plugins
- Add Stripe for fiat charges (But I suggest to go BITCOIN ONLY) and do not accept anymore shitcoin fiat.
Option 2: run a BTCpay / LNbits on Voltage.cloud node

From what I've found, OpenNode has been the best.
If you're a server administrator skill level, you can mess around with btcpay server.
