Depends on the situation.
Very few times I do onchain txs nowadays, when I do is mostly for opening/closing LN channels. All my regular bitcoin spending is only on LN, not onchain anymore.
If I open channels and I am not in a hurry, I put 2sat/vbyte and wait.
If is just a normal opening channel, I check on mempool and set the medium fee.
If I am in a hurry, I will let the app decide the best.

Depends on mempool. I usually go with the low priority if i need it soonish. If i can wait 1-3s/vB.
