Question - was this installed on a local machine? I've tried using proxmox in a cloud VM in the past, but gave up in the end as couldn't figure out the network configuration..

Yes locally hosted. Setup of proxmox requires knowing the gateway and choosing a static IP that isn't already reserved for that network.
Perhaps ask your cloud provider what network settings to use.

If you only want to use this for media/homeserver and not bitcoin stuff, then good alternative to Umbrel is https://casaos.io/ . I haven't tried it with proxmox, but natively it works quite nice for headless smallpc.

Nice. This way you could have a different instances. Maybe one is just for Invidious so guests could use it, and even one just for Firefox
