I'm a newbie when it comes to Bitcoin and other Cryptos but I noticed something, I kept using fiat currency to know how much value I had in my wallet.
Once I learned and played with satoshis, been such a small unit, I found myself ignoring their fiat value and just used them alone.
That made me think, in a dream world where Bitcoin is what you can simply call "money" and no other currencies around, how would you price things like an apple, a water bottle or a bus ticket?
That would assume BTC has no quote price and has absorbed a significant amount of the world's value, enough to where the confidence curve (volatility) has flattened to track global GDP (loosely the amount of new goods and services entering the economy), and the distribution schedule (issuance) is insignificant. In this case, equilibriums between buyers and sellers are achieved, as Siggy47 suggested below, it's a real free market.

When I sell some stuff, I already often price it in sats not euros.

In the same way you price anything today in fiat.
For example, you look around for similar things and see how much those are. If your service/product is better, you should charge more, etc.
It's all relative in the end and price is just an invented number that changes over time. Also how valuable things and services are change over time as well.
Price is simply a number used to try to convince another person to exchange their "meta-value" (money) for your goods and services so that you can trade it for other goods and services.
Money is a middleman basically, you price things accordingly.

Mark prices in both fiat value and sat value, let customers observe fiat price rise over time while watching sat price fall

Pricing things in Satoshis, is the only way to do it. Why? Fiat and everything else won't stand.
