What do you guys think about projects like Seedsigner (fully stateless) or Blockstream Jade in stateless mode? With more and more supply chain issues for chips like secure elements and strange moves from companies like ledger, would the stateless trend pick up in the next few years? Is seedQR good enough or should we think about something else?

It's difficult to predict the future.
If stateless is easier to use, I might predict it's "the future." If it's not easier to use, I'm not sure how I'd reach the conclusion that it's the future. We know it's cheaper and will probably always be cheaper, but what other switching rewards do people get?

Well, they’re not only cheaper, but potentially safer if you know how to store/secure your seed properly and use a bip-39 passphrase. Also, the fact that something like a seedsigner is made of common electronic components that you can get everywhere (potentially from different stores and even pay in cash for them) gives you unprecedented levels of anonymity. I see a big future for the “stateless” approach, but curious to hear what others think.
