I don't think there's any issue using an eSim for 2FA, the crux is if you let that number expire you must disable or change that expired number in your 2FA settings.

Sadly... a phone number is like an email... so when you get one, it's important to not loose it. Easy way to solve this, don't use a phone number to important things, again... sadly... the society was force to need a phone number as an identification id.
If you can, ask your service provider to not use phone as an id.

Yep, use a reputable Authenticator app everyone. Using SMS authentication makes you vulnerable to sim swapping.
