First they came for your smartphone, then they wanted to get their smarts everywhere with IoT.
Fortunately most devices can be used without an account still today, and we have Linux and BSD that allow you to run your own OS in your own hardware. But that might change in the future, given the design of the new security chips in new computers.
And for mobile we have GrapheneOS, a great smartphone OS without any big tech into it. It's basically what Android should be.

Who is "they"?
Conspiracy theory. There is no they. You can buy FOSS products and self host. Smarthomes can be private and secure.
Home Assistant Open source home automation that puts local control and privacy first. Powered by a worldwide community of tinkerers and DIY enthusiasts. Perfect to run on a Raspberry Pi or a local server.

Who is "they"?
They as in Google, Amazon, Apple, Facebook, etc.
Those are the companies providing these smart IoT devices to the mainstream. Also Windows, macOS, stock Android, and iOS, all of them come with ads and tracking by default.

I agree with you, that's why I continued typing and mentioning all the OSs you can have in different devices that are open source, so that you have full control of your devices.

Practically everything already has eyes: computers, smartphones, smarttvs, video games, etc. The centralized network has us under surveillance, we have to escape, disappear and go to everything decentralized and open source

If you can't buy a non-Internet connected appliance then just don't connect it to the Internet. We have a washer and dryer that have "smart" functionality. Never connected them to anything. Problem solved. That is until they start shipping cellular radios in these things.

There is Peer-to-Peer WiFi connectivity, so in theory a WiFi device could potentially connect to a neighbors device, and if that's connected to the Internet, then your device is as well.
