Do you like to learn and cook "local food" from the place you are staying or do you like to cook stuff that reminds you of "home"?

Never header of the Bağlama before. How is playing it, I mean, how does it feel playing it? I saw some videos just now and somehow it reminded me of a banjo visually, but sounded way different.
