In many (Europeans) country the water mills has been used for many years.

The main used was for grains harvest nearby. The owner of the mill could charge a fee in money or in grains and let the grain owner make flour from his crops.

Now days, many of those mills are useless or in really bad condition.

The picture is from Spain. And those mills are a tourist attractions.

The water flow is just enough to move a heavy rock to grind the grain.

Would be possible and profitable to restore a water mill and use it for mining ⛏️ BTC?, What numbers do I have to run in order to know if would be possible?

How do you call the way to generate electricity from the water? is it a turbine

That sounds more like a generic term.

Hydro electricity could be obtain from a water turbine, tidal stream systems, etc..
