I head that Umbrel is not FOSS. I know there is some alternatives like RaspiBlitz or Citadel. What's the best alternative to Umbrel for a intel NUC ?
What's the level of difficulty for setting up a lightning node from scratch, without OS like that ? with Tor integration ?
  1. Install Debian OS
  2. Install Bitcoin Core (daemon)
  3. Install CLN (Core-LN)
  4. Install CLBoss
  5. Install Electrum Server (Electrs or EPS as you whish)
  6. Install any other app you need to manage your node (RTL for example)
  7. Connect your mobile to your node with Zeus and be happy. No more worries.
I am strongly suggest to use this node as a semi-public routing node, also used to provide liquidity for your other "private" nodes on mobile devices (SBW, Blixt, Breez, Phoenix)

Thx for the info. You don't suggest to use Tor for remote access ? Seems to be the best alternative for me since I don't wan't to install unnecessary tools.

Tor is not for remote access. Tor is to hide your node location. You could access your node directly through LAN or VPN. Why Tor when is so buggy and slow.
If you really want to have a private node, use a node behind a VPN, https://tunnelsats.com/
People have a wrong idea about using Tor. Yes Tor is good, but you have to know where, how, why to use it.

While Citadel may have rewritten most of Umbrel's code to be FOSS, they also try to market their product on Umbrel's weaknesses instead of Citadel's strength. It's kind of cringe. When Aaron left Umbrel last year to build Citadel, all he did was complain and throw fits. He's a very skilled coder, but being 14 shows.

Fringe issues. This things shouldn't really matter. Like not listening to a musician because of their clothes.

Is citadel oriented Bitcoin/lightning or is there any other app like Umbrel ? (for example Nextcloud)

Consider how important FOSS licensing purity should be. Umbrel is FOSS-adjacent. I think it's source-available. FOSS purity is important in many scenarios, but perfect licensing purity is not worth a lot of extra time and energy to the average Bitcoin pleb.
Still, if it means so much to you, I think the others are right. Citadel OS or just Debian.
