Fair point on keeping it simple, but aren't you basically treating your coins as a store of value rather than a spendable asset? I mean, if you're using pen and paper or titanium plates, it's not like you're planning on making frequent transactions or anything

Yes I agree, Bitrefil and bitcoin gift cards make life easier. Do NOT forget that you still feeding the fiat world in this way, selling your precious sats for dirty fiat!
Using this services as intermediaries, you are selling your sats for fiat. Yes, true, you still receive the service and I get the fact that services like Amazon are really convenient. Have you tried spendabit or @shopinbit?
I wanted to pay for my contact lenses with bitcoin. The online shop I use have a bitpay integration but it turns out that you now need to create a bitpay account, which means kyc etc...

Ah shame! This is great to know, thanks for sharing. Merchants should be more aware of the implications of using a payment gateway instead of another. I guess they make it easy for themselves to integrate without considering the limitations that force in the customer. You are probably not the only one giving up because bitpay.
