We have a city which names exactly "Mudhol" and I read somewhere that the king named it on the name of this dog breed.
It's very famous dog breed in South of India.

Give my wife a week and she will have that dog fattened right up. “Oh poor puppy, you are way too skinny”. Haha

We have been trying to put some weight on this girl, but it's been a struggle.

If she's otherwise healthy and active, I'd suggest you not to worry about weight. She looks healthy to me. From my experience, I can tell you that female dogs don't get too much weight in their younghood and mostly in adulthood.
At most give her a shot of ivermectin.

Our dog put on weight when we started feeding her white rice. Which the vet wanted us to do occasionally throughout the day to make sure she never has an empty stomach. Due to her intestinal issues she gets a lot of buildup of bile and needs the rice to absorb it or she will throw up or have diarrhea.
She still eats her regular 3 meals a day of dog food but every few hours we give her a handful of white rice.

It looks rather slim.

Yes, all sight hounds are slim. I guess it's because they track by sight and need to be fast.

You're right
Mudhol Hounds were primarily bred for hunting and guarding. Their streamlined bodies, characterized by long legs and a narrow frame, are optimized for speed and agility. This physique enables them to chase and catch swift prey over extended distances, a trait essential for hunting in the open terrains of India.

I really like the look and description of this breed. I wonder if they're available in the US?

Yes, they are tall and handsome, great runners.
I don't think you'll find them too easily there. But they should be there.
