Strike and Phoenix are two completely different things. Strike is a full custodial service which does KYC and you don't control your own keys while with Phoenix you have your own keys and full control over your funds.
With Strike you don't have to do channel management with Phoenix you have to.
You can also use ecash wallets with a trusted mint but this development is quite early so be aware there could be bugs. Obviously these are as well custodial but at least you get a better privacy than strike. You can learn more here: https://docs.cashu.space/
