So the shop don't even need an internet connection and the employee cannot withdraw, only charge payments. The customer yes, must be online to pay.

You can buy those devices, are pretty cheap and configure yourself with a LNbits instance (it can even be a SaaS service, cloud, or self-hosted).

We are in the process of installing NFC POS systems with included cards. The person in charge of technical work in the community is setting things up—when electricity permits—to host an LNbits instance with the community's node. They offer custodial services, but it is a community-based custodial service. The issue that worries me the most is the electricity supply, as in some areas of the country there are only 4 hours of service, and the POS devices require a continuous power supply.
