Interesting! A little while ago I tried making a starter but I couldn't get the bacteria to grow. My understanding is that you need to control for many factors like water purity, air quality, and the quality of your flour.
Yeah some people seem to have a really easy time and just leave out a jar and have success. Ive tried to start one a few times but I usually forget and I find it infected or dried out
