This is an extremely hard problem to solve tbh, since gossip is forever changing/influx (liquidity and movement of it is never static, nor are network fees), and to find the most highly profitable channels you need to find the gab between two groupings of the network nobody else has found. Also, you have to keep in mind closing/opening fees, how the liquidity is moving across the channels, not to mention the fact privacy is import so very few have a solid picture of liquidity flows across the network, only those running really large nodes or many highly connected nodes have an okay real time picture. Sophisticated analysis is required to create an algorithm that makes this profitable for many people using the same tools. People are working on this, or at least trying to solve the preliminary problems required at attempting a solid solution. What may seem simple from the outside has layers and layers of hidden complexity to get a solution that works and is scalable and profitable (or at least breakeven). There is certainly a need for this product, but it’s not easy is all.

Driving a sports car to the grocery store rarely makes sense when a more economical car is an option. Many companies don’t need all those bells and whistles, some server boxes with some redundancy is “good enough” for many use cases. Really all comes done to running the numbers, and seeing what makes sense for any given business.
Bullish nostr, relays seem like a good trade of to allow many people to run clients (very light, not much data as all you need are your keys to find the messages associated to yourself) without having one central entity controlling all communication (like Twitter for example) as the relays store and propagate the messages through the network

No, they don’t hold the keys in there raw form, they are encrypted client side and there’s no way for them to de-encrypt and spend/move your funds , that’s why they are considered non-custodian
