Anything I can do with the spare machine for/with BTC/Lightning?

I'm not a developer, I'm a product designer who is somewhat technical. However I'm looking to learn, hands on.

You probably wouldn't want to use it for mining for running a node long term, but it could be a good learning experience to set those up! Assuming you don't already have those things. Might be helpful if you want to do that more seriously in the future.

I have neither, but would like to get my feet wet with it. Any links of where to begin with what I need?

https://bitcoin.org/en/full-node#what-is-a-full-node is going to be your primary resource, not to mention https://github.com/bitcoin/bitcoin

Umbrel is good / helpful for setting up a bitcoin and lightning nodes. Planning to use them later this year to set up a bitcoin node. https://umbrel.com

Not actually sure for bitcoin mining - I think mining pools have set up guides, but for educational purposes I'd want to try it independently anyway.

With spare time you could learn programming swift!

I already know basic swift… but yes, useful.

Probably... set up your own bitcoin "validator" node (to contribute to the network), plus a lightning node if you feel adventurous (and then use a graphical front-end or mobile app to connect to it).

If you were a developer, you could then try to build stuff on top of it (tip bot, etc).
