I checked them out.
Ended up using GrapheneOS a couple of years ago. Much better. Can't recommend that OS enough.
Adding to that, the experience you get with current vanilla Pixels is horrible, Google now installs heaps of apps like YouTube that you cannot uninstall.
After you try GrapheneOS I don't think you can ever go back to stock Google.

I've heard that the NFC payment doesn't work on GrapheneOS, is that so?

I personally have never used this feature but based on the discussion on their forum it seems that you need to have Vanilla Google OS to enable that feature:

I don't know for you but for me paying with my phone is really a crucial feature which I cannot give up..

Fair enough, I don't know too much about that feature as I have never used it and probably never will.
I don't think any non-google OS supports that though. If they do, GrapheneOS would support it.

I'm thinking of getting another used android for Lineage for comparison.
It perfectly supports a dozen btc apps and all I need (not much) (StackerNews in browser and pwa has some issues)
The App Lounge (google store copy) allows to install any app from the store, but often doesn't want to log in anonymously (some certificate thing)
customization non existent
has a few privacy features i don't really use (i use just tracker blocking, but can also hide location and ip at the expense of some apps not working)

I don't like that they have opt-out telemetry.

And I don't like that they're trying to push us into their own cloud.
