Could I simply use my trezor app to make a new Wallet with taproot address? Is there any downside of using that over specter etc.?

Can't wait for specter to add support! Would you recommend moving to Sparrow instead?

It doesn't matter. Specter, Sparrow, electrum etc are just interfaces for your wallet, apps that manage your keys. That's all.
The seed words for a wallet should be usable in any supported app.
Just be sure you write down correctly the seed and also did a restore test, checking if you restore the same addresses, before you put any funds.
