It’s not about Apple’s privacy, but about creating a unique email for each site or app. That’s the point.
Correct actually... Email isn't really a private thing... The main benefit is having a unique email for each account such that you can disable at will.
So I'd call it more a security thing than privacy. Security in that if an attacker attempts to create a dossier on you, it's harder for them since they'll not be able to use your email and password from one place (attained by purchasing from dark net) and using it somewhere else, like your bank account, assuming you still use those fiat institutions.
I personally just wouldn't want to use Apple for this... I find their UX to be sub-optimal and requires you to use Apple universally. A major flaw.

Exactly, it's more about security and making it harder for attackers to link your accounts. I get your point about Apple, though. I have to admit that being tied to their products can be a limitation.

run your own domain, self-hosted, with your own email server and you will get infinite aliases as you like.

I don't think we were talking about self-hosting here, but rather services that let you avoid giving out the same email to everyone. Besides, managing an email server isn't something everyone can handle.
