Mine are macaroons. When they are done right, which they often aren't, they taste like donuts without having to be fried (which I suspect is due to the fat in coconuts) or post-donut clarity. The ones I like best aren't exactly made with coconut flour, but it's closer to a coarse flour than it is shredded coconut (which retains too much moisture). The right coarseness lends itself to piping like in this picture I think.
My second favorite dessert, or my favorite when served after a meal, is probably chocolate mousse.
